Delicious avocado pasta with spinach
- Ingredients:
- 350 gr spaghetti
- 250 gr of Salud avocado dices
- 1 clove of garlic
- 2 tb roosted pine nuts
- 1 handful of fresh basil
- 25 gr of parmesan cheese
- 150 gr fresh spinach
- Juice of half a lemon
- Salt and pepper
- Cook the pasta following the instructions on the package. Once the pasta is al dente, then drain.
- Take the bowl of your food processor an add the 250 gr of Salud avocado dices, the garlic, pine nuts, basil, parmesan cheese, along with 2 handfuls of spinach and lemon juice. Season with salt and pepper, and blend until smooth.
- Cut the remaining half of the avocado into cubes.
- Stir the sauce into the spaghetti and mix in the rest of the fresh spinach.
- Divide the spaghetti with the creamy avocado and spinach sauce onto plates. Sprinkle the avocado cubes on top and finish the plates with extra parmesan shavings.
