Avocado pasta
  • Ingredients:
    • 350 gr spaghetti
    • 250 gr of Salud avocado dices
    • 1 clove of garlic
    • 2 tb roosted pine nuts
    • 1 handful of fresh basil
    • 25 gr of parmesan cheese
    • 150 gr fresh spinach
    • Juice of half a lemon
    • Salt and pepper
  1. Cook the pasta following the instructions on the package. Once the pasta is al dente, then drain.
  2. Take the bowl of your food processor an add the 250 gr of Salud avocado dices, the garlic, pine nuts, basil, parmesan cheese, along with 2 handfuls of spinach and lemon juice. Season with salt and pepper, and blend until smooth.
  3. Cut the remaining half of the avocado into cubes.
  4. Stir the sauce into the spaghetti and mix in the rest of the fresh spinach.
  5. Divide the spaghetti with the creamy avocado and spinach sauce onto plates. Sprinkle the avocado cubes on top and finish the plates with extra parmesan shavings.
